Rai Bataka (Easy Spicy Potatoes with Mustard Seeds)

Ingredients
• 1 1/2kg Potatoes, peeled and cut into small cubes• 2 tbsp Olive Oil
• 1 tsp Small Brown Mustard Seeds
• 3/4 tsp Himalayan/Sea salt
• 1/2 tsp Turmeric
• 1 level tsp Ground Coriander
• 1/2 tsp Ground Cumin
• 1/2 tsp Chilli Flakes
• 1/4 tsp Dried Mint
• Groundnut/Sunflower Oil (for frying)
• 1 tbsp Fresh Coriander
Method
STEP 1: Deep fry the potatoes in groundnut/Sunflower oil until theyare cooked and slightly crispy - drain excess oil.
STEP 2: Heat the olive oil and mustard seeds together in a pan.
Cover and turn off heat when mustard seeds have finished popping.
STEP 3: Add the turmeric, salt, ground coriander, ground cumin, chilli
flakes and dried mint. Mix until well combined. Cook for 30 seconds
on a low heat.
STEP 4: Add the fried potatoes to the cooked spices and mix thoroughly.
Garnish with fresh coriander.
Serve with hot chapattis or pitta bread and a cucumber raita.
