Yoghurt Kachumbar


Ingredients

• 1 small Onion, finely sliced
• 1 small Carrot, peeled and grated
• 1/4 Cucumber, cut into small cubes
• 1/2 cup Lettuce, finely shredded
• 4-5 Radishes, roughly sliced
• 375g Greek Yoghurt
• 1 tbsp Fresh Coriander, finely chopped
• 1/4 tsp Dried Mint
• 1 pinch Ground Cumin
• Salt to taste

Method

STEP 1: Prepare the carrot, cucumber, onion
radishes and lettuce. Empty into a medium size bowl.
STEP 2: Add coriander, ground cumin and dried mint.
STEP 3: Add yoghurt and salt and mix well.

Serve as an accompaniment with rice and curry dishes.
