Muni's All-Purpose Kheema


Ingredients

• 500g Chicken Breast Mince
• 1 large Onion, sliced
• 3-4 tbsp Groundnut/Sunflower Oil
• 1 level tsp Cumin Seeds
• 1 tsp Ground Cumin
• 2 tsp Ground Coriander
• 1/2 tsp Turmeric
• 1 1/4 tsp Himalayan/Sea Salt
• 2 cloves Garlic, crushed or grated
• 1 inch piece Fresh Ginger, grated
• 2 Green Birds-Eye Chillies, de-seeded and finely chopped
• 1 level tsp Dried Mint
• 1/4 tsp Red Chilli Flakes
• 2 tbsp Fresh Coriander, finely chopped
• 1 Spring Onion, finelly chopped

Method

STEP 1: Heat oil in a large frying pan. To this, add onions
and cumin seeds and fry until onions are soft and translucent.
STEP 2: Add the mince, turmeric and salt.
Cook until the water has evaporated.
STEP 3: Add ground cumin, ground coriander, garlic, ginger, dried
mint, green chillies and chilli flakes.
Mix well and cook on a low heat for 5 minutes.
STEP 4: Add coriander and spring onion and stir into the mince.
