Kheer (Indian Rice Pudding)

Ingredients
Serves 4Cooking time Approx. 1 hour
• 1/2 cup Long Grain Rice, washed
• 1 cup Water
• 1.1 litres Whole Milk
• 1/3 cup Sugar
• 2 pinches of Ground Elachi (Cardomom)
• 1/4 tsp Whole Nutmeg, grated/Ground Nutmeg
• 2 tbsp Pistachios, chopped
• 1 tbsp Almonds, Chopped
Method
STEP 1: In a medium heavy-based pot, add rice and water.Cover and cook on a medium heat for 7-10 minutes.
STEP 2: Add milk and bring to the boil on a high heat.
After it has come to the boil, lower the heat and simmer for 50
minutes, stirring occasionally.
STEP 3: When rice pudding has thickened, add sugar, ground elachi,
nutmeg, pistachios and almonds. Stir well
Serve hot or cold.
