Puri (Fried Flatbread)

Ingredients
Makes approx. 35-40 Puris• 4 cups Plain Flour
• 3 tbsp Ghee
• 3 tsp Baking Powder
• Pinch of Himalayan/Sea Salt and Ground Cumin
• 340ml cold Milk (add more if required)
• Groundnut/Sunflower oil for frying
Method
STEP 1: Mix together dry ingredients, to this add theghee and Mix well.
STEP 2: Add the milk and mix to form a soft dough.
Knead dough for 5 minutes.
STEP 3: Brush with ghee.
Cover and leave to stand for 30 minutes.
STEP 4: Break dough into large marble-sized balls and roll
into small circles.
STEP 5: Heat oil in a medium heavy-based pan or karai.
When oil is hot, deep fry until golden.
Cover with some kitchen paper and tea towel to keep
puris soft.
Serve at room temperature.
